Grow oregano in average, well-draining soil in full sun well after the danger of frost in early spring. Be careful to not allow the soil to become too wet. Oregano is extremely drought tolerant, and should be allowed to dry out completely between waterings. Fresh oregano leaves can be snipped periodically, though the flavor is most intense if harvested right as flower buds are starting to form. Dry oregano leaves and stems in a dark, dry location by hanging in a paper bag. Once you have hand-separated the leaves from the stems, the dried leaves should be stored in a dark, airtight container.
